Tempe: Indonesian Cultural Heritage for the World

Program Overview


The Summer Course Tempe: Indonesian Cultural Heritage for the World is an annual program organized by the Department of Food Science and Technology (DITP), IPB University, since 2017. This fully in-person program will take place from July 27 to August 2, 2025, at IPB University, featuring a series of academic and practical activities designed to provide an in-depth understanding of tempe, Indonesia’s iconic fermented food.

This summer course aims to promote scientific, cultural, and commercial knowledge of tempe, aligning with Indonesia’s efforts to recognize tempe as a UNESCO-listed heritage. The program also supports IPB University’s internationalization strategy, strengthening collaboration with global academic and industry partners.

Program Structure
Participants will engage in a comprehensive curriculum combining lectures, hands-on practical sessions, and field trips to key tempe-related institutions. Key learning activities include:
• Lectures & Discussions: Covering topics such as the history of tempe in Indonesia, fermentation and production techniques, microbiological and biochemical changes during fermentation, the health benefits of tempe, industrial-scale product development, and tempe entrepreneurship abroad. Special guest lectures will also explore other fermented foods worldwide.
• Hands-on Practical Sessions: Participants will learn to produce tempe from scratch and prepare traditional Indonesian tempe-based dishes.
• Field Trips & Excursions: Visits to Rumah Tempe Indonesia, Bogor Botanical Gardens, Museum of Zoology, and key food industries such as PT Indofood Fortuna Makmur to understand the broader context of tempe production and its commercialization.
